Sprinkle with some parmesan from your HEa or serve just as it is.[EXPAND SAUSAGE, TOMATO AND SPINACH PASTA]SAUSAGE, TOMATO AND SPINACH PASTA PRINT Serve 4 Author: Slimming Eats INGREDIENTS 1 onion, finely chopped 2 cloves of garlic, crushed 2 tomatoes, peeled and chopped 4 mushrooms, chopped 1 cup/240ml of passata 1 cup/240ml of chicken stock 4 sausages, sliced (8 syns)* 3 handfuls of spinach 225g/8oz of pasta (can use gluten free) splash of balsamic vinegar salt and black pepper spray oil METHOD Spray a frying pan over a medium high heat with some spray oil Add the onion and fry till softened. Add the garlic and mushrooms and fry for a further few mins. Add in the sausage and chopped fresh tomatoes and cook till the tomatoes, start to break down into a sauce Add the passata, splash of balsmaic and stock and bring to a boil. Reduce heat, cover and simmer for 20 mins. In the meantime add the pasta to a saucepan of boiling hot water and cook till al dente. Drain and stir through the sauce with the spinach.
